It is distinguished by an exceptionally high quality, which is recognized by true devotees of this royal variety. Its colour is straw yellow to golden yellow; it is of a very pronounced varietal aroma and flavour, and the full-bodied quality characteristic only of Traminer. Most often, it is a semi-dry wine because it regularly gathers a high content of sugar, which allows the unfermented sugar to remain in the wine. Its harmony and elegance make it an exceptionally pleasant aperitif, suitable choice to serve with fine dishes from white meat and fish, and it goes particularly well with light desserts.

The first plantations of Chardonnay as a new variety in the vineyards of Ilok date back twenty years. Supreme Chardonnay is the supreme quality white wine. It is mostly dry, and semi-dry in exceptional years with optimum conditions, when the content of sugar is exceptionally high thus leaving an abundance of unfermented sugar in the wine. The wine is of greenish yellow colour and of crystal glow. Full-bodied and harmonious, with an almost ideal proportion of alcohol and acids, this supreme quality wine has a nicely pronounced flavour content that is characteristic of this variety, especially in Ilok. It perfectly suits dishes from white meat and quality fish, as well as fine cheeses and desserts.

Cabarnet Sauvignon is a red wine made of grapes picked in the vineyards at the selected positions of Ilok hills. It is a dry wine of dark ruby color, harmonious and round, of gentle and mature tannins. Due to maturing in oak barrels Cabarnet Sauvignon is a well structured wine, with scent reminding of clove, berry fruits, as also often of green pepper and vanilla. This wine is well matched with beef, lamb, turkey, and even pork dishes, whereas due to smaller content of tannin also with fish.

The tradition of cultivating pure varietal plantations of Rhone Riesling has been nourished since the Middle Ages. Rhone Riesling from Ilok is a quality, dry to semi-dry wine, with a characteristic and delicate flavour, yellow greenish colour and a full-bodied aroma. In recent years, it contains a residue of the unfermented sugar which emphasizes even more its balance and fullness. It excellently complements selected dishes from white meat and quality fish, and a late vintage of this wine suits specialties such as frog legs, escargot dishes and crabs.

It continues a tradition of red wines from Ilok, which was esteemed and praised in the 15th century. Frankovka from Ilok is a dry, red wine of a ruby colour. It has a rich varietal aroma, a pleasant, full-bodied and balanced flavour. Its origin is in the winegrowing area of Syrmia where the tradition of cultivating fine varieties of grapes has been nourished since the Roman times. With its pleasant flavour, it excellently complements dishes from dark meat and small game, even of a somewhat piquant flavour, and it is exceptionally pleasant with fine cheeses.

This is a supreme quality predicate wine produced from the grapes that have been affected by the mould of the grapes with a high concentration of sugar that can only be achieved at the selected locations of the winegrowing area near Ilok. This wine comes from the grapes that are left on vines until late in the autumn and exposed to the sun and the first autumn frosts. It is a wine of a golden yellow colour with recognizable aroma of the late vintage and Traminer variety. Its flavour is full-bodied and its unfermented sugar and acids are well balanced. It is recommended as an aperitif and served with desserts chilled to 10-12 °C.

The bottle of wine covered with patina of the old age is always a challenge for wine lovers because the surprise that awaits in the bottle can hardly be predicted. It ordinarily results in delight, because this wine is produced, nourished and preserved under special attention of the caring cellarers. These wines are produced from the grapes that have become overripe on the vine which makes it richer in sugar, varietal aroma and extracts. The wine produced from these grapes has a higher alcohol and extracts’ content and almost always, a higher residue of unfermented sugar which makes it possible for this wine to preserve its quality for many years. Only a wine which is older than 5 years can be called vintage wine, and within these five years it has to be bottled for at least 3 years. By aging, this sort of wine gains in quality and its primary aromas transfer to the secondary and tertiary ones over the years. Thus, it is difficult to find in them a varietal aroma, but on the other hand they are rich in aroma which reminds one of the mature old wine with a note of honey flavour which actually forms a very complex aroma. It is mostly served with desserts. But it can also be served as an aperitif.
